Badlands Grouse

Ingredients:
2quarts of water
1 bay leaf
Four grouse breasts
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms
2 Tbs butter
2 Tbs flour
1 cup chicken broth
2 Tbs lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 cup of heavy whipping cream
2 Tbs fresh parsley
Boil grouse in water with bay leaf until tender. Strain broth and set aside, saute mushrooms, onions in butter. Add flour, broth, lemon juice, salt and pepper. Bring to a boil and cook 2 minutes. Add grouse, cream and parsley. Serve over rice or toast. (Serves 4)
